D\u2019une part, leur calibre est plus important car les tenders sont \u00e9labor\u00e9s \u00e0 partir de g\u00e9n\u00e9reux morceaux de poulet mais pas n\u2019importe lesquels. Il s\u2019agit des muscles de l\u2019animal donc autant dire les parties les plus qualitatives et tendres. Ils n\u2019en finissent pas d\u2019inspirer les professionnels de la restauration qui le d\u00e9clinent de plusieurs mani\u00e8res. Dans les pains, dans les tortillas ou bien en salade, ils sont partout.
